Dr. Christopher John Smith currently working as the Director of the Manchester Food Research Centre and Professor of Food Science at Hollings Faculty. His principal research skills are in Food Science, analysis using aptamer technology, immunodiagnostics, vitamin deficiencies, removal of saturated fats from foods, food production waste reformulation.

Dr. Young W. Park currently working as the Professor in the department of Ag research at Fort Valley State University. His principal research skills centered on dairy goat products development and their nutritional, chemical and food quality evaluation. He has taught dairy products technology, food chemistry, food analysis, food processing, nutrition laboratories, etc. at three different universities in the USA.

Dr. L Preston Mercer currently working as the Professor at the Department of community and Family Health, College of Public Health, University of South Florida. His major research interests focused on effects of dietary manipulation of protein, amino acids on serum and brain levels of amino acids and precursors of neurotransmitters.
